Easy Chicken Tortilla Soup
Put chicken and diced tomatoes into slow cooker and heat on high for 4 hours.
Take chicken out and shred.
Return chicken to pot. Add beans and corn. If desired, drain beans and corn and replace liquid (about 1 cup) with chicken stock.
Season to taste (about 1 packet of taco seasoning. I buy it in a shaker so I can add as much as I like!)
Cook for 1 hour. Add microgreens for the last 5 minutes.
Ladel into bowl(s.) Top with any or all of the remaining ingredients. Enjoy!
